Real quick. Your problem was, if I understand you correctly, you didn't
change to surface name of the text you stenciled. Therefore it defaulted
to the same surface as was already on the sphere you stenciled it to.
#1 Make your sphere in layer 1.
#2 Assign your sphere a surface by selecting all the polygons and then
hitting 'q' and creating a new surface for your sphere.
#3 Create your text in layer 2.
#4 Put layer 1 (sphere) in the foreground and layer 2 (text) in the
background.
#5 Hit the Drill button then toggle Stencil button on the requester AND
Create a new surface for the stencil.
#6 Hit OK.
#7 Save your object and/or export it into Layout and change the surface
attributes of at least one of the surfaces that is on your new object.
#8 Render and enjoy....
There you go! Eight, hopefully easy steps to stenciling.
